Thai Chicken Salad Recipe

Salad was my favorite food was. It is cool, refreshing and light and sweet and sour dressing adds a real zing. It's for a salad I ate at a restaurant in Southeast Asia styled. This salad is called "Banana Blossom Salad" Although the ingredients contained in it are different, the texture and taste are similar.

Ingredients:

  • £ 1 cooked chicken breast, cut into thin slices (you can use chicken meat desired)
  • 3 cups shredded Napa cabbage (can use regular)
  • 3 cups peeled jicama cut into strips
  • 1 small red bell pepper, cut into strips
  • 1/3 cup chopped fresh mint
  • 1/2 cup chopped fresh cilantro, including stems
  • .
  • Dressing:
  • 3 tablespoons white wine vinegar
  • 2 tbsp lemon juice
  • 2 tablespoons Thai fish sauce
  • Replace equivalent sugar 1/2 cup (Sweetzfree preferably liquid)
  • 1/2 teaspoon freshly grated ginger
  • 1/2 teaspoon Asian chili sauce (such as Sriracha) or other hot sauce
  • Ingredients:
  • 1/4 cup chopped peanuts
  • Mint
  • Coriander leaves

Preparation:

Mix all salad ingredients, and in another bowl, combine the dressing ingredients. Mix well. Garnish as desired.

Nutritional Information: Each of 4 servings (including packing peanuts) has 8 grams of carbs effectively 7 grams of fiber, 42 grams of protein and 297 calories.
