Profile carb cauliflower
Ingredients:
- 1 medium cauliflower (about 4 cups / 1 liter florets)
- 2 hard boiled eggs
- 1 medium stalk celery, chopped (including leaves)
- ½ cup chopped green bell pepper
- 2 scallions (white and green parts)
- 3 tablespoons instant mashers Carb Counters (optional)
- Third cup of mayonnaise
- 1 tbsp mustard (brown or yellow)
- Lemon juice 1 teaspoon
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1-2 drops hot sauce or a pinch of cayenne pepper (optional)
- 1-2 teaspoons worth of sugar substitute
- 2 tablespoons sugar-free or sugar-like taste or chopped dill pickles
- Salt and pepper
- Fresh herbs (optional, but good - see below for ideas)
Preparation:
2) A microwave films with a small amount of water or water vapor-coated in the furnace vessel. I've never tried to cook, but cauliflower tends to hold on to water, so I'm a little skeptical. You want them to be tender (a fork slides easily), but not too much (to the strong smell and taste, developed with a longer cooking to avoid the).
Drain 3) and in a medium bowl. Hoes and the egg. Mix and season with salt and pepper. I like a little pepper and seems a surprising amount of salt, but would try. Sprinkle with instant mashers Carb Counter, if you use them, and mix again.
4) Mix dressing ingredients (mayonnaise, lemon juice, spices, etc.). Enjoy the balance of flavors that you like. Mix the chopped vegetables and sauce on the cauliflower mixture and egg. Chopped fresh herbs, if you like - chives, dill, parsley, or to work fine, but I have something else used mint. Decorate sprinkle with grass or with paprika. Cold.
Makes 8 servings.
