Low-carb Tamale Pie

This is a version of the low-carb cakes usual Tamale. It has a relatively thin layer (no bottom crust). I use almond powder and whey powder protein to the cortex, but you can easily change. If you want a crust "of cornier", you can replace some of the almond powder to cornmeal, and add a tablespoon of water per tablespoon cornstarch on. It will be 1 gram of carbohydrates per serving for each additional tablespoon of cornstarch. Also, if you do not have whey protein powder around, you can leave - the crust is just a bit thinner.

Ingredients:

  • ½ chopped raw onion
  • 1 ½ pounds ground beef (I used 20% fat for the calculations)
  • Bell 1 small green bell pepper (or ½ large)
  • 1 small red bell pepper (or ½ large)
  • 2 tablespoons chili powder (or to taste)
  • 1 tin of chopped tomatoes (about 15 ounces)
  • 1 can ripe olives chopped (about 4 oz)
  • Salt and pepper
  • Bark
  • ½ cup almond flour
  • ½ cup of regular whey protein powder
  • 1 egg
  • ¼ cup of tomato juice
  • ¼ teaspoon chili powder
  • ¼ teaspoon of turmeric
  • ¼ tsp salt
  • 1 cup grated cheddar cheese (or Mexican blend)

Preparation:

Preheat oven to 350 ° F.

1) Let the tomatoes and reserve the juice.
