Cacciatore means "hunter" in Italian, so Chicken Cacciatore is literally "chicken hunter style." This dish is a bit difficult in the slow cooker because the water tends to the vegetables and the sauce left too thin. It's why I fry vegetables in advance, reduce the liquid and the tomato paste. This also speeds up the cooking time. Parmesan crust thing is something I learned from Cook's Illustrated magazine. Adds a depth of flavor in the sauce salty. This recipe is, of course, low carb chicken than a traditional jacket.
