This pasta salad has all the elements of the traditional Italian caprese salad (plus some capers). I Shirataki noodles on low-carb. Believe it or not, throw a handful of nuts or chopped nuts makes a nice addition.
Ingredients:
- 1 package Shirataki noodles (or other pasta) - it makes about 3 servings
- 1 cup chopped basil
- 1 medium tomato, chopped
- Cut 3 ounces mozzarella cheese into small cubes
- 1 tablespoon capers
- 1 tablespoon extra virgin olive oil
Preparation:
Rinse Shirataki noodles thoroughly with warm water, or prepare other low carb pasta (such as Dreamfields). Add the hot pasta in combination with other ingredients can be mixed flavors somewhat. I like to cut the Shirataki noodles with long practical kitchen scissors.
Mix together all ingredients. From three small portions as a side dish.
Nutritional Information: Each serving contains 3 grams of effective carbohydrates and 2 grams of fiber, 8 grams of protein and 130 calories.
